Black Beans & Yellow Rice

This is a simple, tasty, inexpensive, and visually appealing meal. The bright yellow safflower rice, black beans, and red tomatoes make a dramatic combination!



Ingredients:

Medium package of Mahatma Yellow Rice

Two cans black beans

toppings:

large tomato-diced

sour cream

shredded cheddar cheese



Directions:

Cook yellow rice according to package directions. Rinse black beans and warm them in microwave (about 3 minutes). To plate: place a heap of rice, top with serving of black beans, spoonful of tomatoes, a dollop of sour cream and sprinkle with cheese to taste.
