Steakhome Creamed Spinach

This is the easiest, yummiest side dish I have ever made! I found the recipe in a cookbook called "Bite Me" that I found in the bargain bin at Borders. How could I pass up a book with a title like that?! Enjoy!

2 (10-oz.) boxes frozen chopped or leaf spinach, thawed and squeezed of excess liquid
6 oz. whipped cream cheese
1/4 cup butter, melted
1/2 tsp. kosher salt
1/4 tsp. pepper
2 T. grated Parmesan cheese

Preheat oven to 350 degrees; combine spinach, cream cheese, melted butter, salt, & pepper in a food processor and process for 10 seconds; scrape down sides and pulse 3-4 times; pour into a lightly-greased casserole dish, sprinkle with Parmesan, and bake uncovered for 20 minutes.

Lazy Wife's Cobbler

Ingredients:
4 c fruit
1/2 c sugar (maybe less for other fruits, but I am using blackberries)
1 stick butter
2 c flour
2 c sugar
2 c milk
Place first 3 ingredients in cast iron skillet. Simmer 20 minutes.
Then in mixing bowl, stir together next 3 ingredients. Pour on top of fruit mixture and transfer cast iron skillet to oven. Bake for 45 minutes at 350 degrees.

Stuffed Greek-Style Zucchini

Saw this recipe in All You Magazine, but I tweaked it a bit. I love Mediterranean food!
Ingredients:
1/2 cup brown rice
3 large zucchini, halved lengthwise
1 T canola oil
1 medium onion, chopped
8 oz. white mushrooms, chopped
4 cloves garlic, minced
1 tsp Italian herbs (basil, parsley, oregano, thyme)
2 T lemon juice
salt and pepper
28 oz can diced tomatoes
1/4 cup feta cheese, crumbled

Directions:
Bring 1 cup water to a boil. Add rice, cover, reduce heat and simmer until tender (about 40 minutes). Heat oven to 375. Scoop out centers of zucchini, dice them, and set aside. Warm oil in skillet over medium high. Saute onion about 4 minutes. Add chopped zucchini, mushrooms, garlic and herbs and cook 1 minute. Stir in lemon juice and tomatoes and season to taste with salt and pepper. Place some of mixture in each zucchini boat. Sprinkle with feta cheese. Place in a baking dish and heat about 40 minutes (until tender).
